You should definitely grab the sign up bonuses if you can. Start off with the gold card first then work your way to plat. If you get the plat bonus first, that makes you ineligible for any other plat/gold/green bonus.
After you grab the bonuses, then you should apply without the bonuses. This is because the benefits stack. You can get 1 platinum and 1 gold card every 90 days. With P2, you could get a max of 20 plats between you guys which equates to $4000 a year for united travel bank cash and $4000 a year in ubereats.
It would be smart to get the sign up bonus. Even with the AF waiver, would you really be okay with passing up 800+ dollars in potential value? A smart way to get the sign up bonuses (esp for the platinum which typically requires a bigger spend) without spending money you wouldn’t have is waiting until you actually have a need to spend large amounts of money like PCS’ing, furnishing a new house/apartment, buying a car even if you can convince them to waive the fee.
