So, I am an active duty E5, and I have two dependents – my child from a previous marriage who doesn't live with me, and my current wife. If my wife joins the military as an officer, what would our BAH look like as E5/O1 once she's commissioned?

Only 1 member gets dependent rate.. the other gets single rate
Kinda depends on the branch, the amount of child support you are providing, if you get stationed together. If both active duty. She will get BAH regardless once she gets to her first duty station. You will lose your dependent, and will only rate bah diff. If you submit a BAH own right package, you would receive BAH W diff, which equals the same amount of BAH W.
