Other driver is uninsured and at fault, police told me she was insured and come to find out she’s not. I’m out $1000 dollars on rental car expense and looking for repayment. My insurance said they don’t cover it. What should I do?

Read your policy and see if they are correct or not.
If they are, add it for next time. It’s only a few dollars a month.
You can try to pursue the other driver in small claims court. You will then have to pursue the judgment if you get one and go about collecting the money.
You could sue her but how likely do you think she has $1,000 laying around?
